A vegetable-based Filipino dish meant to be a one-pot-meal for everyday or family get-togethers. Pork and shrimp staples round out the flavors.
Using Datu Puti Patis will make your Pinakbet taste authentic and extra flavorful.

Ingredients
3 tbsp olive oil
1 chopped yellow onion
2 cloves garlic, minced
Dash of Datu Puti Patis
½ lb pork loin sliced and chopped
½ lb peeled and deveined extra large shrimp
salt to taste
pepper to taste
1 chopped large tomato
1 large zucchini cut into bite sized pieces
¼ lb okra sliced into .5 inch pieces
¼ fresh green beans trimmed
¼ eggplant cut into bite sized pieces
1 small butternut squash cut into bite sized pieces
Step 1:
Heat oil in a dutch oven or large pot over medium heat. Stir in yellow onion, garlic and add a dash (or two) of Patsis. Cook until tender and fragrant, about 5 minutes.
Step 2:
Add pork. Cook, stirring occasionally until browned. About 7 minutes.
Step 3:
Add extra large shrimp and cook until pink. About 4 minutes.
Step 4:
Stir in the chopped tomato, season with salt and pepper. Cover and simmer for 5 minutes.
Step 5:
Stir in remaining vegetables, cover and cook until veggies are tender; about 10 minutes.
